These Potatoes Are Better Than Pizza
Ingredients
2 pounds (about 1 kilo) potatoes (Yukon Gold or Russet)
3 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
1
teaspoon paprika 1 teaspoon garlic powder ½
teaspoon dried oregano or Italian seasoning
Toppings
Cheese 1½ cups shredded mozzarella
½ cup grated Parmesan
Optional garnishes (highly recommended)
Freshly chopped parsley or chives
Chili flakes (optional)
Sour cream or garlic sauce for dipping
Instructions
Prepare the potatoes
Preheat oven to 400°F.
Wash the potatoes and cut them into thin slices or wedges (do not peel them unless you want to).
Season with salt and pepper
Place the potatoes in a large bowl.
Add olive oil, salt, pepper, paprika, garlic powder, and oregano.
Toss until evenly coated. Bake
until crispy
Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
Bake for 30-35 minutes, turning halfway through, until golden brown and crispy.
Add the cheese
Remove from oven.
Sprinkle the mozzarella evenly over the potatoes.
Garnish with Parmesan.
Melt and finish
Return to oven for 8-10 minutes, until the cheese is melted and bubbly.
Optional: Grill for 1-2 minutes for extra browning (watch carefully).
Serve
Garnish with parsley or spring onions.
Serve hot with sour cream or garlic sauce.
