Crispy Garlic Parmesan Potato Slices
Perfectly crispy on the outside, fluffy on the inside, and full of garlic-Parmesan flavor—perfect as a snack or side dish.
Ingredients
4 medium russet potatoes, thickly sliced
3 tablespoons olive oil
3 cloves garlic, minced (or 1 1/2 teaspoons garlic powder)
1/2 teaspoon salt (or to taste)
1/2 teaspoon black pepper
1 teaspoon paprika (optional, for color and flavor)
1/2 teaspoon Italian seasoning (optional)
1/2 cup grated Parmesan cheese
Fresh parsley, chopped (optional)
Instructions
Preparing the Potatoes
Preheat oven to 220°C.
Wash and scrub the potatoes (peel if desired).
Cut into evenly sized chunks.
Optional, but recommended: soak the potatoes in cold water for 20-30 minutes for extra crispiness. Drain and pat dry.
Season with salt and pepper.
In a large bowl, toss the sliced potatoes with:
Olive oil,
Garlic (or garlic powder),
Salt and pepper
, Paprika and Italian seasoning (if using).
Toss until evenly coated.
Baking
Place the slices in a single layer on a baking sheet lined with parchment paper, skin side down.
Bake for 35-40 minutes, turning halfway through, until golden brown and crispy.
Add Parmesan.
Remove from oven and immediately sprinkle Parmesan over the hot slices.
Return to oven for 5 minutes, until cheese is melted and lightly browned.
Serve.
Garnish with fresh parsley.
Serve hot with ranch, garlic aioli, ketchup, or sour cream.
Tips & Variations
For extra crunch, broil for 2-3 minutes at the end (watch carefully).
Add red pepper flakes for a spicy kick. 🌶️
Works great in an air fryer at 400°F for 18-22 minutes, shaking halfway through.
